Ultimate Easter Peeps Cookie Bars

I can’t believe Australia doesn’t have Peeps after all these years.  Elise Strachan from My Cupcake Addiction has to buy a bunch of Peeps here in the USA and take them back to make all her delicious goodies.  We here in the USA eat over 700 million Peeps every year.  WOW!  Ultimate Easter Peeps Cookie Bars comes from an instant cake mix with all those beautiful colorful Peeps bunnies.

Not only is this a great idea for Easter.  If you love making cake mix cookies, you could make Valentine cookies with the red velvet cake mix.  Halloween cookies can be made with the orange Peeps.  Peeps has so many different colors and flavors.  Cake mix cookies come out super soft and fluffy.

Ultimate Easter Peeps Cookie Bars Recipe

Servings: 24 bars

Cookie Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 egg yolks
  • 1 egg
  • 1 15.25-ounce box yellow cake mix, like Betty Crocker
  • 1/4 cup multi-colored sprinkles

White Chocolatey Fudge Layer Ingredients

  • 1 14-ounce can sweetened condensed milk
  • 3 1/2 cups white chocolate chips
  • 1 1/2 teaspoons vanilla extract
  • 3 packages Peeps (different colors)
  • 1/4 cup sprinkles
  • 1/4 cup pastel M&M’s

Directions:

  1. Preheat oven to 325 degrees F (163 degrees C).
  2. Spray a 9×13 baking dish with nonstick cooking spray.
  3. Using a hand mixer or stand mixer, beat butter on medium-high in a large bowl until soft and fluffy, about 2 minutes.
  4. Add egg yolks and egg, and beat for another 2 minutes.  Gradually add box of yellow cake mix on low speed.  May have to stop mixer (develops a dough consistency) & use a spatula.  Fold in sprinkles.  Press into baking dish.
  5. Bake for 18-20 minutes until the edges start to turn golden brown or comes out clean with a toothpick.
  6. Remove from the oven, and let sit until cooled.

White Chocolate Fudge Directions:

  1. Melt down the white chocolate chips using a double boiler on low heat.  Stirring occasionally until the chocolate is melted and smooth.
  2. Add entire can of sweetened condensed milk and vanilla extract to the bowl. Stirring occasionally, until the chocolate is melted and smooth.
  3. Remove from the heat and pour over the cookie layer. While the fudge is still warm, lay your multi-colored Peeps bunnies in rows for each bar.  Sprinkle M&Ms, sprinkles, and candy into the empty spaces.
  4. Place in the refrigerator to cool.  (Fudge is warm enough to melt Peeps & candies) Sets a little quicker in the refrigerator.
  5. Let cool completely, and cut into squares.
