Gooey Brownie Mud Hen Bars Recipe

I love pecans and marshmallows.  My family loves anything gooey and sweet.  We are not fans of hard, crunchy cookies except me……..I’m a fan of store brought wedding cookies (did I just talk out of both sides of my mouth…Ha!).  I could eat the whole bag.  Gooey Brownie Mud Hen Bars Recipe is so simple.

You just use your favorite box of brownie mix, mini-marshmallows, and chocolate chips.  My favorite is Hershey’s chocolate chips.  They have a lot of flavor.  For years, I made cookies and pies with Toll House Semi-sweet Chocolate chips.  One day, I grabbed a bag of Hershey’s milk chocolate chips.  I never went back to Toll House.  Several recipes call for semi-sweet but I go for the milk chocolate because it adds a milder, sweeter taste.

These fabulous Gooey Brownie Mud Hen Bars cook with ooey-gooey on the inside and a sweet crunch on the outside.  Kinda like my cream cheese pound cake I bake from scratch.  My sister-in-law always goes for the crunchiness on the outside of the cake.  She says it’s the best thing.

Gooey Brownie Mud Hen Bars Recipe

Ingredients:

  • 1 Box Brownie Mix + Corresponding Ingredients (eggs/oil/water)
  • 2 Egg Whites
  • 1 cup Brown Sugar
  • 1/2 cup Pecans
  • 1/2 cup Mini Marshmallows
  • 1/2 cup Chocolate Chips

Directions:

    1. Prepare Brownie Mix according to directions on the box.
    2. To a medium mixing bowl add two egg whites and beat until stiff peaks form (about 2-3 minutes). Carefully fold in Brown Sugar until incorporated.
    3. Pour Brownie Mix into greased 9×9 inch baking pan.
    4. Top Brownie Mix with Pecans, Marshmallows, and Chocolate Chips.
    5. Spread Brown Sugar Meringue evenly over brownie layer.
    6. Bake in preheated oven at 350˚F (175˚C) for 35 minutes – (f the top starts to brown too quickly – cover loosely with aluminum foil halfway through).
    7. Remove from oven and allow to cool completely at room temperature.
