Delicious Malteser Cupcakes

Great cakes for a birthday party.  You could place them on a pretty cupcake holder tree for a party cake.  Kids just love them.  Great to take to a cake sale at school or for work collegues.  They love them!

If you can’t find the chocolate maltesers, substitute the white maltesers on chocolate frosting and vanilla cake.  Whoppers can be substituted for Maltesers.

Milo is a malted drink but a chocolate malted drink.  Tastes totally different from horlicks & ovaltine.  Be aware milo will taste more chocolatey than a malted milk powder.

Delicious Malteser Cupcake Recipe

Servings: 12 cupcakes

Cupcake Ingredients: 

  • 1 tsp (5g) cocoa powder
  • 1 2/3 tbsp. (25g) Horlicks (Malted milk drink powder, Ovaltine or Milo are good alternatives)
  • ¾ cup + 1/4 tsp. (95g) Self-raising flour
  • ½ cup + 4/5 tbsp. (125g) caster sugar
  • ¼ tsp bicarbonate of soda
  • Pinch of salt
  • ½ cup + 1 tbsp. (135g) unsalted butter, softened
  • 2 large free-range eggs
  • ¼ tsp vanilla extract
  • 1 ½ tbsp whole milk

Vanilla Buttercream Frosting Ingredients:

  • 1 4/5 cups (200g) unsalted butter, softened  (almost 4 sticks of butter)
  • 3 3/5 cups (450g) icing sugar, sifted (sifted powdered sugar, confectioners, icing same thing)
  • 3-4 tbsp whole milk
  • ¼ tsp vanilla extract
  • 1/3 cup (100g) crushed Maltesers (Whoppers in USA)
  • Extra Maltesers for the top

Cupcake Instructions:

  1. Preheat oven at 170 degrees C (338 degrees F).
  2. Line a 12-cup muffin pan with cupcake liners. Set aside.
  3. Thru a sifter into a mixing bowl (stand-up mixer with paddle attachment) add your flour, cocoa powder, malt powder, bicarbonate soda, salt, and castor sugar.
  4. After dry ingredients are sifted thru, take your unsalted butter and add as well.
  5. Place bowl under your mixer paddle. Add 2 large (free-range) eggs one at a time.  Start on low speed at first.  Then medium speed for about 60 seconds.
  6. Lastly, add your vanilla and 1 ½ tbsp. whole milk. Whip mixture for another 30 seconds.  After mixing, scrap batter off paddles.
  7. Scoop cupcake batter into liners, approx. 2/3 full evenly. Bake at 170 degrees C (338 degrees F) for 20 to 22 minutes.  Cake is done when toothpick inserted in middle comes out clean.
  8. Let cupcakes cool completely before frosting.

Vanilla Buttercream Frosting Instructions:

  1. Crush 1/3 cup (100g) Maltesers (Whoppers) in a food processor or place them in a ziplock bag & use a rolling pin to crush them. Crush them into small pieces & place in a bowl.
  2. Place softened butter in mixer. Beat for 5 minutes until pale & fluffy.
  3. Add ½ of the sifted icing sugar (or sifted powdered sugar) & beat well. Add the other ½ and beat well for 2-3 minutes between each.
  4. Add ¼ tsp vanilla extract and 3-4 tbsp. of whole milk. Mix on low speed.
  5. Start with the 1/3 cup (100g) of crushed Maltesers (Whoppers). If it looks like you need a little more…just add a little bit more to the frosting.  Mix with spatula.  Add just enough to work with the frosting.  Not too stiff.  (Want flavor with some chunks of Malteser/Whopper)
  6. Frost your cupcakes with a big piping bag with a big round nozzle. Fill you piping bag up & frost your cupcakes with a swirl.
  7. Decorate cupcakes with 3 Maltesers (Whoppers) on each one.
