Cute Yellow Chicky Surprise Cupcakes

Sometimes I just want the kids to get involved in the kitchen with me.  During Easter is a great time.  We all gather around the kitchen table.  Color and decorate boiled eggs.  It’s tradition with my family.  The kids get a kick out of decorating the eggs.  I found this easy recipe.  I call them Cute Yellow Chicky Surprise Cupcakes.  It is so simple.

My kids are gonna enjoy helping me fill the holes with candies and frosting the cupcakes.  We will probably have a big mess in the kitchen.  Who cares!  It’s all about making childhood memories so when they grow up they will remember what fun we had.

For those of you who don’t know what Peeps is.  They are made in the U.S.A with all different colors and flavors.  Every holiday they surprise me and the kids will different animals and shapes.  My favorite has always been yellow chicks.  I have ventured out into the Peeps bunnies.

Cute Yellow Chicky Surprise Cupcakes

Servings: 24 cupcakes

Ingredients

  • 1 box of yellow cake mix (Betty Crocker)
  • Add water, vegetable oil, and eggs per cake mix box instructions.
  • 1 cup assorted mini candy-coated chocolate candies, jimmies, or confetti candy sprinkles
  • 1 container of frosting (Betty Crocker Rich & Creamy – any flavor)
  • Green food coloring
  • Green colored decorating sugar
  • 24 yellow Peeps marshmallow chicks

Directions

  1. Preheat oven to 350 degrees F (325 degrees F for dark/nonstick pans).
  2. Place cupcake liners in each of the regular-size muffin cups.
  3. Mix cake batter per directions on box.  Fill each cupcake liner about two-thirds full with batter.  Bake per directions for cupcakes.
  4. Cool in pans for 10 minutes.  Remove from pan.  Place on cooling rack.  Cool completely (about 30 minutes).
  5. Use a melon baller or scoop.  Scoop out center of each cupcake (approx. 1 inch deep).  Fill with 1 teaspoonful of candies.
  6. Place frosting in a medium bowl & add green food coloring till desired color.
  7. Frost cupcakes.  Sprinkle with colored sugar.  Place on top the yellow Peeps chicks.  Store covered.
