Buttercream Grass Vanilla Cupcakes

Cupcakes are a fun way to celebrate Easter or St. Patrick’s holiday.  These Buttercream Grass Vanilla Cupcakes can be used for a Easter church event or a fundraising event.  I like how simple these cupcakes are to make.

Buttercream grass frosting has many uses.  If your son loves baseball, you could make a sheet cake with a small baseball diamond and decorate with grass around it.  Some folks don’t have a piping bag and tip.  You could improvise and use shredded or flaked coconut.  Mix some green food coloring & make grass that way.

One lady used a slightly damp sponge.  Sort of dabbed the frosting with the sponge immediately after frosting the cake.  Gave it a stucco effect.  However, for beautiful grass or hair…….a Wilton #233 tip works best.  Instead of buying just on tip, why not purchase the buttercream basics set which also includes a Wilton #233 tip.  Click here to see set.

Buttercream Grass Vanilla Cupcakes

Servings: 24 cupcakes

Vanilla Cupcake Ingredients:

  • 3 cups all-purpose flour
  • 2 cups granulated sugar
  • 3 teaspoons baking powder
  • 1 teaspoon table salt
  • 16 tablespoons unsalted butter (2 sticks @ room temp)
  • 1 cup sour cream
  • 2 large egg (room temp)
  • 4 large egg yolks (room temp)
  • 3 teaspoons vanilla extract

Vanilla Buttercream Frosting:

  • 2 cups (16 ounces) unsalted butter (room temp)
  • 5 cups powdered sugar
  • 2 tablespoons vanilla extract
  • green gel food coloring

Buttercream Grass Vanilla Cupcakes

Instructions:

  1. Pre-heat oven to 350 degrees F. Line standard muffin/cupcake tins with liners.
  2. Whisk together flour, sugar, baking powder, and salt in mixing bowl.
  3. Add butter, sour cream, egg and egg yolks, and vanilla; beat at medium speed until smooth and satiny (30 seconds). Scrape down sides of bowl & mix by hand until blended.
  4. Fill liners 2/3 full with batter.  Bake 20-24 minutes or until toothpick inserted in center of cupcake comes out clean.  Transfer cupcakes to a wire rack from pan & cool completely before frosting.
  5. For icing, whip the butter on medium-high speed for 5 minutes, stopping to scrape the bowl once or twice.
  6. Reduce the speed to low.  Gradually add powdered sugar until incorporated.  Increase speed to medium-high.  Add vanilla.  Whip at medium-high speed until light and fluffy (about 2 minutes), scraping the bowl as needed.
  7. Add green gel food coloring (a small amount till desired color).  Mix by hand thoroughly.
  8. Frost cupcakes with frosting tip or with a spatula.

(Note:  May store any unused buttercream in the refrigerator in an airtight container; let it come to room temperature and then give it a quick whip in the mixer before using.)

Fun Buttercream Decorating Set For Beginners

I hear this decorating set is great to start making some beautiful cakes or cupcakes.

You get 10 decorating tips which also includes the Wilton #233 tip used for making grass and hair.  Ten disposable decorating tips with instructions are included.

Some individuals have trouble matching the tips with the disposable bags included.  Make sure you are matching the larger tab with the larger slot (on 2 of the 3 pieces).  Pastry bags included are not easy to fill when attached to couplers.

If you purchased just the Wilton 1M tip by itself, it would cost more than to purchase the entire set.  In other words, you get more bang for your buck.  Recommend practicing with instant frosting first before using actual homemade buttercream icing. Click here for more information.

If you haven’t perfected the grass technique, then use the Wilton 1M tip out of your set to make the ice cream swirl & place 3 Cadbury eggs on top.  Cute!
